  • 2 lbs chicken tenderloin
  • 1 tsp pink himalayan salt
  • 1/2 tsp black pepper
  • 2 tbsp sesame oil
  • 1/3 cup coconut aminos teriyaki sauce
  • 1 tbsp fresh ginger
  • 2 tsp minced garlic
  • 1 tsp xanthan gum
  • 2 tbsp lime juice
  • chopped scallions


How to cook Teriyaki Chicken

  1. Cut chicken into bite size pieces, season with salt and pepper.  Heat sesame oil in large skillet over medium-high heat, add chicken, cover and cook for 6-8 minutes, stirring occasionally, until the chicken is white.
  2. Reduce heat.  Mix other ingredients in a bowl and whisk.  Pour the mixture into the skillet and stir to make sure all the chicken is coated.  Cover and simmer another 4 minutes until mixture is boiling.
  3. Remove cover and stir until sauce thickens, just a couple of minutes.
  4. Top with scallions and serve with cauliflower rice.
